Recipe for Masala Brinjal:
Heat two teaspoons of oil in a pan, add half a teaspoon of turmeric powder, two chopped onions and salt for 5 minutes. Add Chili Powder to taste, 2 tbsp Perfect Goda Masala, Salt to taste, 2 tbsp crushed roasted Peanut, 1 Tbsp Finely Dried Coconut Oil. Saute finely chopped dry coconut in it. Once the mixture has cooled, fill that mixture into small brinjals. Put the stuffed bringels in a pan, add 1.5 cups of water and the rest of the spices and cook for 15 to 20 minutes. Add green coriander and serve.
